Strawberry-goat cheese salad

This is such a super-easy recipe to make. And it’s great in the summertime, when super-easy salads are just what you want, especially if they feature fresh produce.


Of course, the down side of super-easy is that I only have this one photo to share because, well, there simply wasn’t that much to this.

Start with about 3 cups of rinsed chopped sweet lettuce (I used butter lettuce). Then add about 12 ounces of fresh strawberries, rinsed, cored, and quartered. To this, add one-half cup (about 4 ounces) of chopped goat cheese. And, if you like, add 1/4 cup of minced nuts (I used pecans though English walnuts or another mellow nut would work well, as well as candied sweet nuts).

Arrange it artfully in the salad bowl, with the lettuce on the bottom, a ring of strawberries on top, then the goat cheese in the middle, and everything sprinkled with the minced nuts.

Serve with a mild dressing, such as a buttermilk-yogurt or avocado-yogurt dressing.

We also served this with planked grilled salmon (drizzled with olive oil and sprinkled with smoked sea salt and chopped herbs) and a Virginia Chardonnay. Perfect meal for a hot summer evening!
